Banana & Pecan Whole Wheat Muffins


1½ cups whole wheat flour
1 cup white flour
¾ teaspoon salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 tsp baking soda
1 tsp baking powder
¾ cup canola oil
½ cup sugar
3 eggs
1 tbl vanilla extract
2 tbl molasses
1 cup mashed bananas
½ cup low fat vanilla yogurt
1 cup chopped pecans


- Set oven temperature to 325 degrees F.
- Sift together flours, baking powder, baking soda, salt & spices.
- Mix oil & sugar. Beat in eggs. Add vanilla & molasses while mixing. Blend in banana & yogurt.
- Mix dry ingredients into wet ingredients.
- Blend in chopped pecans.
- Place 18 cupcake liners in muffin tin. Fill each liner ¾ full with batter.
- Place muffins on middle rack. Bake for 20 minutes or until toothpick inserted comes out dry.

Makes 18 muffins
