Recipe for a healthy version of mashed potatoes

Green Mashed Potatoes
Today, I tried this recipe, but with some changes. I substituted dandelion greens with baby spinach, used less olive oil (~1/4 cup), kept the skins on the potatoes, and added crushed garlic and salt and pepper to the mix. Mmm... mmm... mmm. Warning: watch the dish while it broils, unless you want to set off the smoke alarm.
